BASIC CHICKEN STOCK
In this video, I show you how to make an easy homemade chicken stock. Making your own stock is a great way to instantly step up your soups and any other dishes you'll make with it.
INGREDIENTS
3.5 lbs Chicken Parts (at least half should be raw)
5.25 Quarts Water
2 Onions
2 Carrots
2 Celery Stalks
6 Sprigs of Thyme
Small handful Parsley
2 Bay Leaves
1 Tbsp Black Peppercorns
1 tsp Apple Cider Vinegar
STEPS
Roughly chop the carrots, onions and celery stalks into large pieces.
Add the water to a large stock pot with the chicken parts, chopped vegetables and all of the other ingredients apart from the vinegar.
Bring the water to a boil over high heat.
As the water boils, skim off any foam that forms over the top and discard.
Reduce the heat and bring to a simmer.
Add the cider vinegar and gently stir.
Let simmer, uncovered, for 5-7 hours.
Remove the large ingredients first with a pair of tongs before straining through a fine mesh strainer over a large bowl.
Skim off the layer of fat that forms on top.
Divide the stock into containers to use immediately or store in the freezer for later use.
