BASIC GLUTEN-FREE PIZZA

INGREDIENTS

DOUGH

BAKER’S PERCENTAGES

  • 100% Caputo Gluten Free Flour

  • 120% Water

  • 1.5% Instant Yeast

  • 2.5% Salt (volume varies depending on brand)

  • 3% Extra-Virgin Olive Oil

AMOUNTS FOR TWO 12” PIZZAS

  • 281g ( 3 1/8 Cups) Caputo Gluten Free Flour

  • 338g (1 3/8 Cups) Water

  • 4.2g (1 1/3 tsp) Instant Yeast

  • 7g Salt (volume varies depending on brand)

  • 8.5g (1/2 Tbsp) Extra-Virgin Olive Oil

    • WEIGHT OF EACH DOUGH BALL: 305g

  • I recommend 149g of Wisconsin brick cheese and 117g of sauce per pizza, but you can adjust to suit your tastes.

STEPS

1. Mix all ingredients, and immediately transfer to a wide, round container.

2. When the dough has almost doubled in size (after about 1-2 hours), preheat your oven to 550F (287C) with a baking steel inside (if you don't have a baking steel, you can use a sheet pan instead).

3. Once the dough has about doubled in size, transfer it to a lightly floured piece of parchment paper (using rice flour or caputo gluten-free flour) set on top of a pizza peel.

4. Shape the dough to the desired size, using a rubber spatula to press the dough out, trying to maintain a thicker crust around the edge.

5. Slide the dough into your preheated oven, and bake for 2 minutes. Turn the broiler to high, and bake for another 2-4 minutes until the dough is charred to your liking (it should be just slightly less charred than you would like the final pizza to be).

6. Remove the par-baked dough from the oven and top it with your sauce, cheese, and toppings, if using.

7. Slide the pizza back onto your baking steel, this time without the parchment paper underneath. Bake for 2 minutes at 550F (287C), followed by 1-3 minutes with the broiler set to high, until the pizza is done to your liking. I also recommend rotating the pizza about half way through the broiling period to ensure even browning.
