PERFECT CHEESE SAUCE
INGREDIENTS (Makes 4oz of Sauce)
1/4 Cup (60g) Milk (I prefer whole milk)
1/2 tsp Sodium Citrate
3oz Cheese
For my cheesesteak sauce I use 1.5oz Mild Provolone and 1.5oz White American, but any cheese would work
STEPS
In a skillet or saucepan, heat over medium-low heat until simmering.
Whisk in the sodium citrate, then add the cheese.
Whisk or stir frequently until all cheese is melted.
To hold until ready to use, place a lid on the saucepan and turn the stove to the lowest possible heat. Stir every few minutes, and adjust the heat as needed to keep the sauce smooth.
