THE ABSOLUTE BEST BANANA BREAD
In this video, I show you how to make the absolute best, incredibly moist banana bread. It has a soft, tender, crumb, and a delicious, perfectly sweet flavor. I hope you give it a try!
INGREDIENTS
¼ Cup (48g) Granulated Sugar (or brown sugar)
1 Cup (192g) Brown Sugar (preferably dark)
2 eggs, separated
3 Lumpy mashed very ripe bananas
2 Cups (240g) All-Purpose Flour
½ tsp. Kosher Salt
1 tsp. Baking Soda
1 tsp. Baking Powder
¼ Cup (75g) Buttermilk
1/2 Cup (1 Stick, 113g) Unsalted Butter
2 tsp. Vanilla Extract
½ Cup Chopped Walnuts (optional)
STEPS
Preheat your oven to 325F (160C)
Mash bananas in a bowl until you are left with a smooth, shiny, and only slightly lumpy mixture.
Add 2 egg yolks to the bowl, and place the 2 egg whites into the bowl of a stand mixer.
To the bowl with the egg whites, add 2 tsp of vanilla extract and whip to soft peaks. Add ¼ Cup of granulated sugar, then continue whipping to firm peaks.
To the bowl with the banana mixture, add all of the brown sugar and mix well.
In a separate large bowl, combine the flour, salt, baking soda, and baking powder, and whisk or stir to combine. Then, add the buttermilk and butter.
Slowly add the banana mixture to that same bowl, and mix well.
Fold the whipped egg whites into the bowl with the rest of the ingredients.
Spray a 9x5 loaf pan with cooking spray, and add a piece of parchment paper.
Pour the batter into the pan and bake 55-65 minutes, until the top reaches a deep, golden-brown color and a toothpick inserted comes out clean.
Remove the loaf by pulling out the parchment paper, and place it on a wire rack to cool for at least 10 minutes before cutting into it.
