COLD-OIL FRENCH FRIES AND BRUSSELS SPROUTS
INGREDIENTS
FOR FRENCH FRIES
1lb Yukon Gold Potatoes, cut into 1/4” by 1/4” fries (or larger, depending on your preferences)
You can keep the skins on, if desired
At least 1qt Neutral Oil (I prefer Vegetable Oil)
Salt, to taste
FOR SWEET POTATO FRIES
1lb Russet Potatoes, cut into 1/2” by 1/2” fries
You can keep the skins on, if desired
At least 1qt Neutral Oil (I prefer Vegetable Oil)
Salt, to taste
FOR BRUSSELS SPROUTS
1lb Brussels Sprouts, cut in half
At least 1qt Neutral Oil (I prefer Vegetable Oil)
Salt, to taste
STEPS
FOR FRENCH FRIES
Add oil to pot, along with your cut potatoes.
Turn your stove to medium / medium-high heat. You should aim for an oil temperature of about 190F (88C) after the first 5 minutes.
Stir the potatoes occasionally until your oil reaches 210F (100C), which should be about the first 7-8 minutes.
Allow the fries to cook for another 12-13 minutes without touching them.
Continue to cook for about 5-10 more minutes, stirring occasionally, until the fries are browned to your liking.
Remove to a wire rack, and immediately toss with salt.
The total coking time should be 25-30 minutes. If your fries are done sooner than this, use a lower temperature next time. If they take longer than this, use a higher temperature next time.
FOR SWEET POTATO FRIES
Add oil to pot, along with your cut sweet potatoes.
Turn your stove to medium / medium-high heat. You should be aim for an oil temperature of about 190F (88C) after the first 5 minutes.
Stir the potatoes occasionally until your oil reaches 210F (100C), which should be about the first 7-8 minutes.
Allow the fries to cook for another 12-13 minutes without touching them.
Continue to cook for about 10-15 more minutes, stirring occasionally, until the fries are browned to your liking.
Remove to a wire rack, and immediately toss with salt.

FOR BRUSSELS SPROUTS
Add oil to pot, along with your cut brussels sprouts.
Turn your stove to medium / medium-high heat. You should be aim for an oil temperature of about 190F (88C) after the first 5 minutes.
Allow the brussels sprouts to cook for 25-30 minutes, stirring occasionally (every 5 minutes or so), until they are browned to your liking.
Remove to a wire rack, and immediately toss with salt.
If your brussels sprouts are done within 15 minutes, use a lower temperature next time. If they take longer than this, use a higher temperature next time.
