PERFECT HOMEMADE BAGELS
In this video, I show you how to make homemade bagels. They can be prepared in advance, so you can have them ready to bake for breakfast in the morning!
INGREDIENTS
FOR THE BAGELS
375g (3 Cups) Bread Flour
210g (7oz) Water
8g (2 tsp) Kosher Salt
12g (4 tsp) Brown Sugar (preferably dark)
3g (1 tsp) Quick-Rise Yeast
Cornmeal or Semolina Flour
1 egg
1 Tbsp Baking Soda
FOR THE EVERYTHING SEASONING
2 Tbsp Sesame Seeds
2 Tbsp Poppy Seeds
1.5 Tbsp Garlic Flakes
1.5 tsp Onion Powder
1.5 Tbsp Kosher Salt
FOR THE CINNAMON SUGAR TOPPING
2 Tbsp Granulated Sugar
1.5 tsp Ground Cinnamon
1 Tbsp Butter
STEPS
In the bowl of a stand mixer, add the bread flour, yeast, sugar, and water.
Stir the ingredients together with a dough whisk or spoon until all of the ingredients are fully incorporated.
Cover and leave to sit for 30 minutes.
Add the salt to the dough and knead with the dough hook attachment for 15 minutes or so or until a smooth ball has formed.
Transfer the dough to an unfloured surface and knead a little more by hand.
Divide the dough into 6 equal sized pieces and form each piece into a ball.
Cover with a damp dish towel and leave to rest for 20 minutes.
To shape the bagels, take each ball and roll into a log. Then, connect the two ends and roll with your hands to seal it together.
Place the bagels onto a parchment lined baking tray sprinkled with cornmeal or semolina flour and also dust the tops of the bagels.
Cover and leave the bagels to rise in the fridge for at least 10 hours or up to three days.
Heat a large pot of water over high heat and heat the oven to 350°F or 180°C.
For the everything seasoning or cinnamon topping, combine the ingredients in a small bowl and set aside.
Prepare the egg wash by beating the egg in a small bowl with about 1 tsp water. Set aside.
Once the water is boiling, add the baking soda.
Gently drop the bagels into the water one at a time using a spider strainer.
Cook each bagel for 30 seconds- 1 minute on each side.
Place the bagels back onto the semolina/ cornmeal lined baking sheet.
Brush each bagel with egg wash and sprinkle with the everything seasoning. If using the cinnamon topping, only sprinkle with a little salt at this time.
Bake in the oven for about 25 minutes or until a deep golden brown colour. Rotate the tray half way through baking to ensure an even bake.
Leave the bagels to cool for at least 15 minutes.
For the cinnamon bagels, melt the butter and brush over the bagels while they are still a little warm. Sprinkle over the cinnamon topping and serve.
